Dippy Eggs: With A Twist

Instead of using sliced white toast as the soldiers, this recipe uses crumbed avocado, asparagus spears and seeded crispbreads for a healthier version

Serves:2
Prep time: 5 minutes
Cook time: 5-10 minutes, depending on soldiers

  • Ingredients

    3 eggs


  • Crisp breads spread with herby cream cheese


  • 1 slice wholewheat toast buttered and sprinkled with mixed seeds


  • Steamed Tenderstem broccoli


  • Steamed asparagus with and without Parma ham


  • 1 large avocado


  • 2 tbsp plain flour


  • 75g breadcrumbs

1. Peel and de-stone the avocado, then slice into thick, long slices. Dust in the flour, dip into the beaten egg and finally toss in the breadcrumbs, so that each piece is fully coated.
2. Heat one tbsp olive oil in a large, non-stick frying pan and add the breaded avocado. Fry on a medium-high heat for around two to three minutes per side, until golden and crisp. Sprinkle with a little sea salt, then set aside to prepare the eggs.
3. Place the eggs into a small saucepan of simmering water. Simmer for five minutes, then remove and place into an egg cup. Tap the top of the shells with a teaspoon and remove the top.
4. Prepare your soldier of choice and dip in!
