Raw Beet Salad

Who said salads don't fill you up? This one is nutritionally balanced with good sources of fat and protein, leaving you feeling satisfied...

Serves: 3 or 4 as a main course

  • Ingredients

  • 1 large beet, grated

  • 1/2 bunch frisée, leaves separated

  • 1 bunch broccolini, woody ends trimmed, thinly sliced

  • 4 stalks kale, stalks discarded and leaves torn

  • 3 tbsp roughly chopped walnuts

  • 1 large handful mixed fresh herbs (such as mint, flat-leaf parsley, dill, and chervil)

  • Seeds of 1/4 pomegranate

  • 3 tbsp goji berries (optional)

  • Dressing (optional)

  • To serve:

    4 hard-boiled eggs, peeled and halved

Place all the ingredients in a large bowl. Add dressing (if using) and gently toss until everything is evenly coated. Season with salt and pepper.
Arrange the salad on a platter, then top with the eggs. Season with more salt or pepper, if desired.
