Cook It: Rainbow Pepper Steak Fajitas

Pippa Middleton shares an easy yet tasty dinner which takes just 15-minutes from fridge to table



  • 400g fillet or sirloin steak


  • 1 tsp sunflower oil


  • 2 tsp baharat spice mix


  • 1 yellow pepper, deseeded and cut into strips


  • 2 red peppers, deseeded and cut into strips


  • 1 red onion, thinly sliced


  • A handful of coriander leaves
  • To serve:

    4 soft wholemeal tortilla wraps


  • 4 tbsp reduced-fat guacamole


  • Low-fat natural yoghurt


  • 1 little gem lettuce, shredded

1 Remove and discard any of the visible fat from the steak and then cut into thin strips. Place the beef in a bowl with the oil and spice mix and coat in the spice.

2 Heat a large, non-stick frying pan. When hot add the beef, peppers and onions and stir-fry over a high heat for seven to eight minutes, until lightly browned and the peppers and onions have softened. Stir in the coriander.

3 Serve the beef and pepper mix wrapped in warm wholemeal tortillas with a little guacamole, low-fat yoghurt and shredded lettuce.

Pippa’s Top Tip: As an alternative to tortillas, wrap the filling in a large iceberg lettuce leaf.
