Light dessert recipe: Blackberry Fool

This healthy dessert recipe is sure to hit the sweet spot

If you have a sweet tooth but you’re trying to keep sugary treats to a minimum, this light dessert recipe is a must-try. It’s made with fat-free Greek yoghurt, vitamin C-packed blackberries and Splenda for added sweetness, so it counts towards your 5-a-day! Plus it’s quick and easy to make and only 249 calories per portion.

Ingredients (serves 4)

Half a vanilla pod

250g blackberries

Half a lemon

165ml double cream

100ml fat-free Greek yoghurt

6g Splenda granulated

Method

  1. Scrape out the seeds of the vanilla pod. Put 200g of the blackberries in a saucepan and add the vanilla seeds, Splenda and lemon juice. Bring it to a boil and let it simmer for around 4 minutes, until syrupy. Set aside to cool.
  2. In a bowl, whisk the cream to form peaks and fold through the yoghurt with a third of the berry syrup.
  3. Create layers of the yoghurt mixture in a dessert glass with the remaining syrup in between. Garnish with the remaining fresh berries.
